* petals from lemon tree flowers (if not available you could use petals from a bitter / Seville orange tree)
* lemon juice
* sugar (3 times the weight of the petals)
* water
METHOD
1. Clean petals from any stamens (they would paint the petals yellow)
2. Rinse the petals under running water
3. Boil some water and put the petals in the boiling water for 2-3 minutes
4. Rinse the petals and put them in a jar with lemon juice (can be slightly diluted with some water). Leave for 2 hours
5. Boil the sugar with a few spoon fulls of water for 10 minutes, until you get a light syrop
6. Rinse the petals from the lemon juice and put them in the syrup. Boil for 5 minutes
7. Remove from heat, squeeze some lemon juice, stir and leave aside to cool before placing in jar.
