* 500 gr self - raising flour
* 1 1/2 cup sugar
* 1 tea cup butter (or 1 tea cup olive oil)
* 1 tea cup orange juice
* 3 eggs
* 3 tspns orange rind
* Icing sugar
METHOD
Beat all ingredients (except of the icing sugar) with a mixer for 5 minutes. Pour the batter into a buttered cake tin and bake in 200 C for about an hour. Remove from oven, turn out on a platter and sprinkle with icing sugar.
Note: This version of the recipe is light, especially if using olive oil. You can use butter, add 1/2 cup sugar and two more eggs if you want the cake to be more calorific and to have stronger taste.
